Apple Cinnamon Cake

I have to confess, that I am obsessed with apples and cinnamon! I love apples and spices, especially in the winter time, because they make me feel warm and cozy. Even if it' s cold and rainy outside, this smell of apple and cinnamon gives me the feeling, that everything is ok.

This Apple Cake is fluffy and a bit of juicy inside. I am sure you will love it!!!

If you love apples, as much as I do, go on, grab some and give it a go!


What you will need

For the Apple Cake you will need the following simple ingredients:

  • self rising flour

  • sugar

  • eggs

  • apples

  • greek yoghurt

  • cinnamon

  • margarine


How to make Apple Cinnamon Cake

This cake may be eaten for breakfast, snack or as a dessert. I really enjoy it with a cup of tea or coffee. All you need is some simple ingredients and juicy red apples. In order to make it you first need to cut the apples, remove the core, peel them and then cut them into thin slices (about 1 inch thin). Place them in a bowl, add sugar and cinnamon and carefully mix them with your hands until they are completely coated.

For the batter you will first need to beat sugar and eggs very well, until white and fluffy. This may last about 10 minutes. Then you gradually add margarine, yoghurt and self rising flour until all of the ingredients homogenize.

The next step is to place a parchment paper (alternatively butter and flour the pan) in a big and wide pan and add 1/2 of the batter. Lay half of the apples to the mixture, but avoid to add the liquid created from the apples and the sugar-cinnamon mixture. Add the remaining batter and place the rest of the apples vertically and upright. Optionally you can sprinkle your cake with grated walnuts or nuts of your choice. Bake in a preheated oven for 50-60 minutes at 180C, set to fan. When the cake is ready, remove it from the oven, let it cool for about 20 minutes and turn it out of the cake pan. If you used parchment paper, remove it carefully, so that the cake won't shatter. Optionally dust some icing sugar. Cut a huge piece and enjoy!!!


This recipe can also be made as muffins. You simply divide the batter into muffin cases and add some chopped apples in the same way as the cake. Just make sure you fulfill 2/3 of each muffin case. Bake them for approximately 20-35 minutes (depends on how big your muffin cases are) or until golden brown.


To make sure that the cake or muffins are baked correctly, insert a toothpick inside. If it comes out clean, you made it!


How to store

Once the cake have completely cooled, store it in an airtight container. It can last in the refrigerator up to 6 days.

Servings: 12

Preparation time: 20 mins

Cooking time: 50-60 mins


Ingredients

For the Mixture

500gr Self-Rising Flour (or All-Purpose Flour and a Baking Powder instead)

250 gr Margarine (room temperature)

1 Yoghurt (room temperature)

5 Eggs

1,5 cup of Sugar


For the Filling

5 Red Apples, cut into slices

1 cup Sugar

1 tbsp. Cinnamon



Method

  • Cut apples into thin slices, sprinkle them with sugar and cinnamon, mix and set aside.

  • Preheat the oven to 180C (356F) set to Fan.

  • Beat eggs, add sugar and continue to beat until they become a fluffy white mixture.

  • Add yoghurt, margarine and finally the self-rising flour.

  • In a big and wide oven pan place a parchment paper (or butter and flour the oven pan instead) and fill it with half of the mixture.

  • Lay half of the apples to the mixture.

  • Add the remaining mixture and sink the remaining apples vertically and upright.

  • Bake for 50 to 60 minutes at 180 degrees (Fan).

  • Remove the cake from the oven, let it cool for about 20-30 minutes, before turning out of cake pan. Remove parchment paper carefully, so that your cake won't shatter.

  • Cut a slice and enjoy!
