This Baked Chickpea Stew is made with simple ingredients, that you definitely have in your kitchen. It's uncomplicated, quick, tasty and super nutritious. Feel free to enjoy them with some flatbread or over rice.
Like other legumes, chickpeas are high in fiber and protein and they make a great replacement for meat in vegetarian and vegan diets. They also contain vitamins and minerals. They may offer a variety of health benefits, such as improving digestion, aiding weight management and reducing the risk of several deseases.

Servings: 4-6
Preparation time: 10 minutes
Cooking time: 1 1/2 hour
Ingredients
500 gr. chickpeas
400 gr. fresh chopped tomatoes or canned
1 big onion, minced
1 green pepper, minced
1 clove of garlic, chopped
3 tbsp. extra virgin olive oil
salt
pepper
Garniture:
fresh parsley leaves
sliced chili pepper or
chili flakes
Method
In a big bowl add chickpeas and cover with plenty of water. Add 2 tbsp. salt and baking soda, cover and soak for at least 8 hours or overnight. They will absorb water and double in size.
Rinse chickpeas, place them in a pot with plenty of water and boil in medium heat for 1 hour. Rinse again and wash the pot.
In the clean and dry pot add olive oil and heat. Add minced onion, chopped garlic, minced pepper and saute for 1-2 minutes.
Add chickpeas and continue sauteing for approximately 1 minute.
Add fresh chopped or canned tomatoes, lower heat to medium and season with salt and pepper.
Add 100-150 ml water and simmer for approximately 20-30 minutes or until all liquids are evaporated and the sauce is thick and rich. Taste and adjust seasoning if needed.
Serve with rice, garnish with fresh parsley leaves and sliced chili pepper or chili flakes if desired and enjoy!
