Greek Mini Cheese Pies

Greek Mini Cheese Pies or "Tiropitakia" are greek shortbread cheese pies. This recipe is made with triticum dicoccum flour, also known as emmer, farro, amidonnier or polba. You can enjoy these mini cheese pies with your breakfast or as a healthy snack during your day.



Triticum dicoccum flour

Triticum dicoccum flour, commonly known as emmer, emmer wheat or farro is an early cultivated grain, related to wheat. Triticum dicoccum was in the ancient years a key component of ancient Greek's diet. It is considered as one of the healthiest food because of its high fiber, vitamins, minerals and antioxidants. The glycemic index is lower than common wheat. It isn't gluten free, but its composition is such, that makes baking products more digestible.



Can I replace the flour?

Yes, you can use any flour you like. In that case I would recommend to mix all ingredients and add flour gradually at the end, so that you can control the amount of flour that you add whilst achieving the right texture of the dough. Always remember, if the dough is too sticky, then add more flour. As an alternative you can use a store bought dough.


 

Recipe


Servings: 20 pieces (15 gr. each)

Preparation time: 15 minutes

Cooking time: 30 minutes

Total time: 45 minutes


Ingredients

For dough

500 gr dicoccum flour

100 gr extra virgin olive oil

175 ml water

1 tbsp. vinegar

3/4 salt


For filling

300 gr feta cheese, crumbled

20 gr milk

1 egg, beaten

1/2 tsp. nutmeg

pepper



Method

  • In a big bowl add all ingredients and mix very well. Knead for some minutes until you have a nice pliable dough that doesn't stick.

  • In a medium bowl add feta cheese and crumble it by using a fork. Add the rest of the ingredients and mix very well until homogenized.

  • Preheat oven to 180 degrees, set to Fan.

  • Prepare a baking tray with parchment paper.

  • Shape the dough into a rectangular loaf and divide into 8-10 pieces. Then shape each piece into a round loaf and using a rolling pin, open it. Use a wide cup to cut them round.

  • Add 1 tbsp filling, fold and press with your hands or by using a fork.

  • Place on the baking tray and drizzle with some water or olive oil.

  • Bake for 30 minutes.

  • When ready remove from the oven, let them cool and enjoy!
