This Lemon Drizzle Cake is everything a lemon lover desires! It is soft, sweet, sour and yet has a fluffy texture, that's often hard to achieve in homemade cakes. The lemon glaze is the perfect final addition to create a dessert that's so simple, elegant and utterly delicious at the same time.
It is made with hand ingredients! The outside is golden brown and the inside is lemony yellow. It is a rich and flavorful cake, that's still fluffy and delicate. It can perfectly be combined with afternoon tea or coffee!
Ingredients
For Lemon Cake
2 Eggs (in room temperature)
1 cup Sugar
1/2 cup Sunflower Oil
1/3 cup Water
2 Lemons (juice and zest)
1 Baking Powder
Pinch of Salt
1 cup All Purpose Flour
1 tsp. Vanilla Powder
For Lemon Glaze
1 tbsp. Butter
1 cup Icing Sugar
2 tbsp. Lemon Juice
Method
For Lemon Cake
Preheat oven to 180 degrees (Fan).
In a mixer's bowl add eggs, sugar, vanilla powder, a pinch of salt and whisk on high speed for approximately 5 minutes or until fluffy.
Add sunflower oil, water, lemon juice, lemon zest and keep beating.
Gradually add all purpose flour, baking powder and mix.
Transfer butter to a buttered and floured bundt pan (32 cm) and bake for 40 to 45 minutes or until golden brown.
When ready, remove from oven and allow to cool.
When cool enough, turn the cake upside down to remove from the mold.
For Lemon Glaze
In a small to medium bowl add butter and heat in microwave for 30 seconds.
Gradually add icing sugar and whisk.
While whisking add lemon juice.
If you want the glaze to be more thick, add more icing sugar.
When the cake is cool enough, drizzle with lemon glaze.
Serve and enjoy with your tea or coffee!!!
