Pancakes, but make it mini! A cute way to enjoy breakfast!!!
What is pancake cereal?
Pancake cereals are mini pancakes, served in a bowl like cereals. Miniature pancake cereals is an idea of Sydney Melhoff, created in April 2020, posted on TikTok and became viral.
Difference between normal pancakes and pancake cereals
The only difference between normal pancakes and pancake cereals is their size. Serve plain or with milk or yoghurt and your favorite toppings.
Topping ideas
The topping ideas are endless when you call for cereals. Enjoy them with cinnamon powder, powdered sugar, cocoa powder, fresh fruits, chocolate chips, maple syrup or honey, nuts, butter etc. or a combination of them.
How to store pancake cereals
If there are leftovers, you can either store them in the refrigerator for up to 3 days in an airtight container or store them in the freezer for up to 3 months. Make sure your miniature pancakes have cooled before storing, otherwise they will become soggy.

Recipe
Servings: 4
Preparation time: 10 mins
Cooking time: 20 mins
Ingredients
1 cup all purpose flour
1 cup whole wheat flour
2 cups milk, lukewarm
1 egg
2 tbsp granulated sugar
2 tbsp. baking powder
A pinch of salt
1 tbsp. sunflower oil
some berries to garnish
Method
In a bowl whisk together solid ingredients (all purpose and whole wheat flour, sugar, baking powder, salt). Gradually add milk egg and sunflower oil and whisk to combine, until you have a homogenized mixture.
Heat a non-stick pan (or crepes maker) over medium heat and grease slightly with sunflower oil.
Carefully pour the batter into a piping bag or a squeeze bottle. Pipe small mini pancakes onto the pan. Cook for approximately 30-45 seconds or until the top starts to create bubbles. Then flip each mini pancake and cook the other side until they become golden-brown. Repeat the same method with remaining batter. (You will need to refill the piping bag/ squeeze bottle).
Serve with favorite toppings & milk or yoghurt. Enjoy!
