Pancakes

Starting the week with homemade pancakes feels SO good! They are perfect for breakfast, brunch or snack during the day and can fulfill any sweet or savoury craving you may have.



A slightly sweet, classic pancake batter that can be topped with desired sweet or savoury toppings. I usually prefer to top them with a good quality honey and fruits, although the topping variations are endless!



Topping variations

There are endless topping variations for pancakes. You can keep it simple with some powdered sugar or some sweetener like honey, maple syrup, nutella, fruit jam, fresh fruits like berries, nectarines etc. A nice option is also Greek yoghurt or whipped cream with some chocolate chips or the fruit options above. For savoury cravings combine them with bacon, sausage, eggs and some green salad.



How to store

The best way is to save some of the batter you 've prepared. Store the batter in an airtight container in the refrigerator for 2 to 4 days. This depends also from the expiration date of the eggs and milk used to make the batter.

You can store them (plain without any topping) in an airtight container (when in a room temperature) and store them in the refrigerator. Then, they can be reheat incredibly well, and doing this let you enjoy pancakes everyday of the week.




 



Recipe



Servings: 10

Preparation time: 15 mins

Cooking time: 30 mins


Ingredients

2 cups all purpose flour

2 tbsp. baking powder

1/2 tsp. salt

2 tbsp. honey or other sweetener

1 tbsp. vanilla (optional)

2 cups milk (lukewarm)

2 eggs

2 tbsp. melted butter (for greasing the pan)



Method

  • In a large bowl combine the flour, baking powder and salt.

  • In another bowl whisk together the eggs, milk, honey, melted butter and vanilla.

  • Gradually pour the liquid ingredients into the dry ingredients and mix the batter until combined. Cover and set aside for 10 minutes.

  • Heat a large skillet over medium heat and grease it with some butter.

  • Pour 1/4 cup pancake batter onto the centre of the pan. Cook until bubbles appear on the surface of the pancake. Using a spatula, flip the pancake over and cook the other side for approximately a minute or until golden.

  • Repeat with the remaining pancake batter. (Don't forget to grease the pan with butter each time adding pancake batter)

  • Serve the pancakes topped with favourite toppings.
