I like how colorful this Red Cabbage and Green Apple Salad is. This is a simple kind of salad or side dish, that is made with fresh red cabbage, carrots, parsley, pine cone, green apple and a naturally sweet and slightly tangy vinaigrette with a hint of blossom honey. This healthy coleslaw recipe is vegan, paleo & dairy free.
In case you didn't know, red cabbage contains more vitamin A and iron than it's green counterpart.
Ingredients
1/2 red Cabbage, grated
2 Carrots, grated
5 tbsp Parsley, chopped
1 Green Apple, sliced
1/3 cup Pine Cone
For Vinaigrette
1/3 cup Apple Cider Vinegar
1/3 cup tbsp. extra virgin Olive Oil
1 tbsp. Mustard
1 tbsp. Honey
Salt
Pepper
Method
In a large bowl, mix together cabbage and carrots.
Season with salt and pepper and press the mixture with your hands.
Add parsley, pine cone, green apple slices and mix.
In a small bowl whisk together the vinegar, olive oil, honey, and mustard.
Drizzle the vinaigrette to your salad, stir and serve.
Notes
I recommend to allow the ingredients and flavors to set together, before serving this salad. Simply store it in the fridge (without the green apple), until you are ready to serve it. Stir it, after you remove it from the fridge, add apple slices, stir again and serve.
You can also make this coleslaw recipe a day in advance and store it in the fridge.
