This hearty and rich Greek Garlic and Potato Dip will make your palate sing. It will bring any boring meal to life with just one bite! I promise!!!
This Greek garlic and potato dip is one "proof", that the mediterranean diet is one of the healthiest! Most important is, that in this recipe we add raw garlic, which boosts its healthy benefits even more!! Garlic is one of the foods, that are well known for their antibiotic properties. It is also one of best natural ways to reduce blood pressure. Therefore, good for a healthy heart, as people say.
"Skordalia" is soft and fluffy mashed potatoes with garlic, vinegar and olive oil. We usually served it with batter fried salt cod, but it can also be served anytime with any meat or vegetable or as a dip. It is also vegan and gluten free.
Ingredients
750 gr Potatoes (approx. 6 medium potatoes)
3-4 cloves Garlic, minced
3 tbsp. Olive oil
50 ml Vinegar, of white Wine
Fresh Ground Pepper
Red Chilli Powder
Salt
Garnish with:
Olive Oil
Parsley
Kalamata Olives, sliced
Method
Peel the potatoes and cut into pieces.
Place a pot filled with water over high heat, add 1 tbsp. salt and bring to a boil.
Add potatoes into the pot and boil for 20-30 minutes or until soften (check with a spoon).
Drain potatoes and let them cool for 5 minutes.
Transfer potatoes to a bowl and mash them with a potato masher.
Add minced garlic, olive oil, salt, pepper, red chilli powder and continue to mash them.
Stir with a spoon until all ingredients will incorporate with the potatoes.
Drizzle with some olive oil, sprinkle with chopped parsley and sliced Kalamata olives.
