This no bake White Chocolate Energy Bars recipe is easy, full of healthy ingredients and irresistibly delicious! They are packed with oatmeal, bran flakes, with a sweet flavour from cranberries, dates and honey, but balanced-sweetened, because of the whole grain tahini. They are also crunchy from the nuts and chocolatey.
This is a perfect wellness snack for kids and adults, keeping body's energy levels steady with their quality fuel. They are an easy mini-meal, that boosts your protein and fibre levels. It also works as a healthy sweet treat for any time and any mood you are in.
Ingredients
200 gr. Oatmeal
100 gr. Bran Flakes
100 gr. Linseed
150 gr. Nuts
80 gr. Cranberries
80 gr. Dates, chopped
300 gr. Honey
200 gr. Whole Grain Tahini
200 gr. White Chocolate
Method
Fisrt add nuts in a food processor.
In a big bowl add all dry ingredients and mix.
Heat honey in the microwave for 30 seconds.
In a large bowl mix honey with tahini.
In the bowl with the dry ingredients, add honey-tahini mixture and mix with a spoon. Continue mixing by hand.
On a 20x30 baking tray/ pan place a baking paper. Spread the mixture and cover with baking paper.
Leave in the fridge for 3-4 hours to set.
When the mixture is already set, melt the white chocolate in a ben marie or in the microwave (800 watt, for 2 minutes).
Spread white chocolate on the mixture and place in the fridge for an hour or until white chocolate is set.
Cut into isometric pieces (in desired thickness) and serve.
